Edible: the root is prized in Japan as a vegetable, gobo, for which many recipes are to be found. The bolting main stem, before flowering, can be cooked as a vegetable, or candied if peeled carefully---the outer skin is extremely bitter. Has been rubbed on the fingers of children to discourage nail-biting.
